A Liberty Township couple has turned a Christmas-themed ice cream truck into a growing family business now in its fourth year.
Rob and Rachel Gilley launched Jolly Treats in 2023 with a single 40-year-old converted mail truck stocked with prepackaged ice cream, as first reported by the Lakota East Spark. Rob Gilley, a professional Santa Claus, said the concept grew from wanting to promote his Santa work without spoiling the magic for children.
The couple booked 50 private events in their first year and added a second, larger truck capable of serving Hershey's scooped ice cream, slushies and mini donuts. The business now books two to six events weekly during summer, including the Liberty Township Fourth of July parade and Lakota East football games.
During colder months, the truck swaps ice cream for hot chocolate and warm mini donuts, with Rob appearing in his Santa outfit. The Gilleys' children, Ethan and Alissa, help run the trucks alongside their parents.
